For the strugglers, break the topic down into it's most basic form. E.G. If it was a dribbling topic, start from which parts of the foot are needed.

For the over achievers, you need to keep the sessions progressing, gradually increasing difficulty until you find their level.

Hi

The STEP process can be used to adjust any session to make it harder or easier in any of the 4 corners.

Space (change area size)
Target/Task (Limit touches, 5 passes to score etc)
Equipment (smaller ball, smaller goals)
People (4v2, 3v1, 1v1, 2v2)

You could also use visual aids (written, drawings, video) or buddy people up, use more demonstations etc.

Great answer.

To encourage the more proficient, I started requiring them to call to their teammate as they made every pass. Say we're playing 4v2, and two of my 4 are proficient, I'll add the requirement that they have to call their teammate or they lose the ball. Took all season, but the four of the girls finally started communicating more on the pitch.
